Restaurant’s Centennial Cookbook. Speaker: Andrew Huse, Assistant Librarian, USF, Tampa Library Andrew Huse is presently researching and writing the history of the Columbia Spanish Restaurant, a project that involved his work at USF's Oral History Program and with the Columbia collection at USF. Huse will discuss the Columbia's fascinating history and the research and writing process: conducting interviews with the owners and employees; archival organization and research; writing recipes; and working with a team to pull all the material together in a book that will be both educational and fun. He will also talk about how the restaurant industry and food habits have changed with U.S. culture as a whole. The book is due to be available in November 2007, published by the restaurant. |
